WINEMAKING 酿造工艺
Fruit was hand picked from our A2, A3 and D2 vineyards planted in 1987, 1971 and 1991 respectively. The fruit undergoes fermentation in open top and static fermenters. Once fermenting the wine is kept at a minimum of 25°C and left on skins for up to 18 days. The grapes are then pressed, settled overnight and gravity filled to new and used casks where it matures at 16°C for 15 months.
